South-West duck Mi-cuit foie-gras with Bissap, topped with fine red fruits jelly, Smooth heart of foie-gras and Porto, toasted brioche and bread.
Roasted tender pigeon supreme, giblets and cherries tartlet, Porto and cherries juice.
Strawberry and rhubarb
Variation around regional strawberry marinated in verbena, stewed strawberries and rhubard with lime, Bourbon vanilla ice.
